It’s Cinco de Mayo people! A great day to sit back and enjoy a Mexican-inspired snack. In celebration, we are sending out a bonus post this week with an easy-to-make Pineapple Salsa recipe.
This recipe originally came from Pinch of Yum. It was a salsa they made as a topping for Caramelized Pork Tacos, but you can make the salsa all by itself. It’s delicious! The version of the recipe below includes tomatoes for a pop of color. A pepper would probably be a nice addition too. This is a super easy and fresh recipe. Give it a try! Chips can make you a little thirsty, so clearly a margarita would go nicely with this snack if you really want to celebrate!
1 c. chopped pineapple
1 c. chopped cucumber
1 small tomato (optional)
½ c. chopped cilantro
½ c. chopped red onion or shallot
Salt (to taste)
Toss everything together in a medium bowl and stir. Grab a bag of chips! Yes, it really is that simple and delicious! Enjoy!
