Magical Meatloaf (Don’t knock it until you try it!)

meatloaf_pinOkay before I begin, I know what you are thinking.  Meatloaf…blah. The most loathed of meat foods.  I don’t know many people who love meatloaf, so you would think my picky eater family would not be okay with it either.  But when Colin was 4 years old, I got a note home from him preschool teacher saying that Colin said his favorite food was meatloaf.  She said that was the first time she had EVER gotten that response.  I can attest that Colin is a very picky eater, so for him to say he liked my meatloaf means it must be pretty good stuff.

Meatloaf is one of the first things my mom taught me how to make.  This is her recipe and it has a “secret ingredient.”  It is really weird, and I would never think to put it into meatloaf, but it is critical to making the meatloaf delicious.  Like, super delicious.  You are just going to have to trust me on this one.  The secret ingredient is….

Grape jelly.

I just heard you gasp.  Don’t knock it until you try it!  You don’t taste the jelly, but it does somehow keep the meat from drying out.  One other thing that I do differently is I slice up bread (preferably a little stale) instead of using bread crumbs.  It keeps the texture from getting too dense.  Less like a loaf of bread and more like, well, delicious meat.  I am serious – you have to give it a try!

So without further ado, here is the full recipe.   There is a printable recipe card at the bottom of this post. If you are brave enough to try the meatloaf PLEASE tell us how it turns out!  I always serve mine with candied carrots, green beans, and/or boiled  potatoes.  Enjoy!

Ingredients

1 pd. Ground beef (80 or 90% lean)
2 eggs
2 Tbsp ketchup
1/4 c milk
1 1/2 c bread, chopped into cubes (If the bread is a little stale that is the best. If you prefer bread crumbs, you only need 1 c of bread crumbs)
Non-stick cooking spray
1 Tbsp grape jelly

Mix it up!

Preheat the over to 375 degrees. Spray the pan with non-stick cooking spray and set aside. Throw all of the ingredients into a bowl and mix thoroughly.  Place the meatloaf into the bread pan.  Place in the over uncovered and cook for 50 minutes.  Remove from the over and let cool for 5 minutes.  Slice and serve.
